National Strawberry Shortcake Day





Happy National Strawberry Shortcake Day! Raise your hand if you love strawberries as much as my family does, what's even better, is a delicious, sweet, home-made, strawberry cake!

On June 11th, co-star Aubrey Anderson-Emmons who plays Lily on the hit comedy "Modern Family" got a sweet birthday surprise! Strawberry Shortcake who was created by American Greetings, presented the young actress with a custom-created strawberry-shortcake birthday cake by "Cutthroat Kitchen" -winning Chef Sandra Cordero. Aubrey turned seven on Friday, June 6th & the celebration continued until the event at Sweet XO in Agoura Hills. 

Aubrey loves Strawberry Shortcake, she thought it was so fun that Strawberry Shortcake gave her a yummy cake for her birthday! In honor of National Strawberry Shortcake Day I was invited to whip up my very own Strawberry Shortcake for my family to enjoy using Chef Sandra Cordero's berrylicious recipe!


Strawberry Shortcake with Rose Cream and Lime

Ingredients:

For the Cake:
 12 tablespoons (1 1/2 sticks) unsalted butter, room temp
2 cups sugar
4 large eggs
3/4 cup Greek yogurt
1 tablespoon grated lime zest
1 teaspoon almond extract
2 cups cake flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

For the Cream:
1 1/2 cup heavy cream
3 tablespoons sugar
1 1/2 teaspoon rose water

For Topping & Filling:
2 pints fresh strawberries
Juice of 2 small limes
2 tablespoons sugar

Directions:
Preheat oven to 350 degrees F
Butter the bottom of two 8-inch cake pans. Then line them with parchment paper & butter & flour the lined pans.
In a mixing bowl, sift the cake flour, salt, baking soda & baking powder & mix well. Cream the butter & sugar on high speed in the bowl of an electric mixer fitted with the paddle attachment until light & fluffy. On medium speed, add the eggs, 1 at a time, then the yogurt, the lime zest, and the almond extract, scraping down the bowl as needed. On low speed, slowly add the flour mixture to the butter mixture & combine just until smooth.

Pour the batter evenly into the pans, smooth the tops & bake in the center of the oven for about 40 minutes, until a toothpick comes out clean. Let cool in the pans for 30 minutes, then remove to wire racks & let cool to room temperature.

In a small sauce pan put half of the strawberries, lime juice & sugar & cook for 5 to 10 minutes, until strawberries break down a bit & the liquid becomes syrupy. Cool. Wash & cut your other strawberries in half or quarters if big.

Whip the heavy cream in a mixture fitted with the whisk attachment until soft peaks start to form then add your sugar, & rose water & mix until firm.

Assembly:
Place one of the cakes on a serving platter, spread with the cooked strawberries & syrup. Then spread 1/2 the whipped cream & scatter with some fresh strawberries. Cover with the top slice of the cake & spread with the remaining cream. Decorate with mores strawberries.

I was so excited to get into the kitchen & create a Strawberry Shortcake for my family to enjoy, we sorta went strawberry overload, we just can't get enough of them! My Mom was able to help as well & of course I shared with everyone, the cake was amazing, it was probably the best cake I have ever made!
