Mouth-Watering Cookie Bars

Lately the kidos have been wanting a cold treat other than "traditional" ice cream or Popsicle. So before I headed to the grocery store, I hoped on Pinterest & found an easy, yummy recipe for oreo cookie bars from 365 Days of Baking & More!

After viewing her blog, I found a few other dessert recipes to save, so after the store we came home & I got started on my new recipe, "Mouth-Watering Cookie Bars".

365 Days of Baking & More's recipe is pretty easy to follow, I did put my pan in the freezer for several hours (instead of the fridge) & then when it was time to eat, I just set out to thaw for a few minutes, cut a square & then stuck it back in the freezer.

1 package Oreo cookies (or an off brand will work)
1/2 stick of butter (melted)
4 ounces cream cheese
1/2 cup confectioners' sugar
8 ounce Cool Whip (I bought Cool Whip Light)
1 package Jello Oreo pudding
1 cup milk

  1. Preheat the oven to 350 degrees F.
  2. Finely crush 18 cookies in a food processor (I used my Ninja blender)
  3. In a medium bowl, mix together the melted butter & finely crushed cookies until well moistened
  4. Press into an ungreased 8x8 inch baking dish
  5. Bake for 10 minutes at 350 degrees F.
  6. Allow crust to cool completely
  7. In a separate bowl, mix the package of Jello Oreo pudding with one cup of milk, refrigerate.
  8. Using a stand mixer, beat the cream cheese & confectioner's sugar together, add in one cup of Cool Whip.
  9. Once the crust has cooled, spread the cream cheese mixture on top
  10. Spread the pudding from the fridge over the cream cheese layer
  11. Take the reaming cookies & crumble them in a plastic baggie, spread out over the top
  12. Freeze for a few hours
  13. ENJOY!
