#Valentines Day Cake Bites

What better way to kick off February than with a sweet treat? These Valentine's Day Cake Bites are one of my favorites to make, they are a little time consuming in the kitchen but worth every bite!

  • One box of vanilla cake (3 eggs, vegetable oil & water)
  • One container of chocolate icing
  • White chocolate candy coating or bark
  • Valentine sprinkles

  • Pre-heat your oven to 350 degrees, spray your glass cake pan.
  • Using your stand-mixer, follow steps on your box of cake, pour ingredients into 9x13 baking dish & bake as according to directions on your box.
  • Let your cake cool completely
  • Dump your entire cake from the pan into a large mixing bowl

  • Scoop out all of the chocolate icing & mix it in with the cake that's in the bowl. Use a heavy or strong wooden spoon, keep stirring until all mixed together. (Yes it gets messy, sorry!)
  • Spoon out the cake/icing mixture & roll into a ball (this is time consuming), you'll want to do the entire bowl.
  • Once all the cake/icing mixture is in balls on a tray I set the tray in the freezer for about 10 minutes.
  • Next your going to melt your candy coating/bark (I use the microwave & melt 2-3 blocks at a time, 30 seconds each, stir & melt again)
  • While hot, pour your candy coating across the tops of all of the cake bites
  • Quickly, before they cool, sprinkle your valentine's sprinkles!
  • Store in the freezer until your ready to eat!

Tip: Since there are so many steps with cake bites, I prefer to use boxed cake mix, if you make your own that will work too!

These are great for classroom parties, to pass out to neighbors, or to just enjoy with your kids! They are great kept frozen, although they don't last long in my house!
