Crock Pot Mexican Chicken

During the week I like to use my crock pot at-least once or twice, with our busy schedule it's nice to come home to dinner already prepared, we also eat a lot of chicken, it's one meat that even my picky eaters enjoy. This recipe is super easy & so versatile, but it's one that quickly became a regular for us, enjoy!

  • 3 or 4 chicken breasts (frozen or thawed is fine)
  • 1 1/2 cup of salsa
  • 2 cups of instant rice
  • 2 cups of water

  • Place instant rice in the bottom of your crock pot
  • Layer chicken breasts on top, add in water & salsa
  • Cook on low for 4-6 hours
  • Serve & enjoy
