Easy Chicken Fajita Avocado Burritos

  • One avocado
  • One cup of shredded cheese
  • A package of burrito size tortillas
  • A small container of plain greek yogurt
  • One package of chicken fajita meat
  • One tablespoon of vegetable oil


  • Slice your avocado open, remove the seed, scoop out the inside & slice it into small chunks/strips
  • In a large mixing bowl, combine chicken fajita meat (about 2 cups), shredded cheese & avocado
  • Spread a small spoonful of plain greek yogurt on the inside of each tortilla
  • Add a scoop of the mixture from the bowl onto your tortilla, roll up tightly
  • Add one tablespoon of vegetable oil to a large frying pan, place your burrito in your pan
  • Cook for about 2-3 minutes on medium, flip over & cook for another 2-3 minutes on the other side
  • Both sides should be golden
  • Serve with your favorite salsa or side of rice

I really love how these turned out, they are so good! I think next time I will add just a little bit more filling, but seriously these are the best burritos I've ever made & they make a great week-night meal!

It is more like a quesadillas. We usually butter and grill anything we put in a tortilla.

This recipe is easy to mak and prefect for,the hot weather we are now experiencing. I might add some fresh spinach.
