Recently I've seen these beautiful blue buildings popping up around my neighborhood, I was super pleased to find out that they are Pollo Tropical restaurants & one is just down the street! Even though school is out for the summer, I still encourage my children to read daily. They really enjoy reading, but they also enjoy shopping for books too! As a single mom I'm always looking for great book bargains, we love to shop at places like Half Price Books, garage sales or you can even visit your local library & rent free books!

Patriotic Stars


I've been experimenting with Jell-O & gelatin this summer & after googling white Jell-O, I realized it didn't exist! They do make white pudding but I wasn't sure how it would hold up, so I was able to figure out an easy way to make it (after only 1 failed attempt) on my own & make these fun Patriotic Stars! The first time I made these - the layers didn't set right, so the second time I just froze everything! This wasn't a hard recipe but it did have several easy steps, I can't wait to make them again!

Summertime Play

Summer time is the perfect time to get out & enjoy the out doors with your friends & family! A few months ago I decided that this summer we would spent a lot more time out & about! There is so much to do in our community from parks to spray-grounds, water-parks, you name it - we probably have it!

Our local spray-ground is one of our favorite spots, not only does it have an awesome splash pad, there is a play ground too. My children always enjoy running & playing with each other & meeting new friends along the way! The spray-grounds tend to get busy fast some days & with the heat it's always nice to go earlier in the day, it's a great way to meet some new families & let everyone play their energy out!

Saying good-bye to the summer blues


The title says it all...saying good-bye to the summer blues. This summer is a different one for us, I'm not sure if it's because my children are older, more mature this summer, if it's just a different season, I'm not sure - it just feels different.

Ever since Big Brother C started school at the age of 3, I've worried, stressed, even cried over summer, the idea of summer break. Why you ask? One word - Regression.

As a parent of a special needs child, most summer's involve a little or a lot of regression, Big Brother C has done summer school once or twice maybe in our previous school district but we weren't happy with the results & the summer school schedule just didn't work for us.

Summer time is a great time for ice cream! My children love eating Popsicle's & I really enjoy making them! I'm so happy with the way these turned out, a little bit of the red Jell-O did get into the blue, but not to shabby for my first time making these! I can't wait to try different flavors!
