Slow Cooker Chicken Tacos #EasyWeekNightMeal

  • A package of soft flour tortillas
  • A package of chicken tenders or 3-4 chicken breasts
  • 1/2 cup of plain Greek yogurt
  • A jar of picante sauce (I use mild)
  • 1 cup of shredded Mexican cheese
  • 1/2 cup of tomato's (I use sunburst) 
  • 1 cup of plain white rice
  • 1/2 cup of water

  • Place your frozen chicken in the bottom of your slow cooker
  • Pour in 1 cup of plain white rice
  • Pour in 1/2 cup of water
  • Pour in the entire jar of picante sauce
  • Cook on low for 4-6 hours
  • When done, your chicken should be tender & will fall apart
  • Shred your chicken & place on your tortillas
  • Layer your toppings - a spoonful of plain Greek yogurt, sprinkle cheese & tomato's on top

These chicken tacos make an easy and delicious easy week night meal! You could always top with lettuce too, I opt to leave it off when I make these because of my picky eaters!
