I recently made a very big life changing decision and decided to go back to school, I say big life changing because for our little family of three - this is a huge deal! As a single parent my days are busy and long. I'm in charge of everyone and everything which includes getting out the door on time, school drop off/pick up, work, errands, attending classes at the local college, therapy, extra curricular activities, cooking meals, laundry, dishes, and so on and on.

In late August the shift to a busier schedule began, so the last few weeks have been an adjustment and a little bit of a struggle as my family gets used to our new work-school-life schedule. It's not easy balancing life as a single parent, I have a few years of experience under my belt but I'm still learning as I go most days.

Plan ahead

It's important to plan ahead - you can use a planner or even the calendar app on your phone. Trust me, when life gets busy you might forget doctor/dentist appointments or remember last minute about special events. It's also great to write down important dates for school so you know ahead of time when assignments and exams are due. I also do some meal prepping for school lunches on Sunday evenings every week, along with setting out the kids outfits for school the night before. It takes just a few minutes of planning every week to make a huge difference in your day to day schedule.

Me time

As busy as life can be, you still need alone or "me time". Whether you enjoy relaxing with a great book, hitting the trails, or just eating a quiet breakfast - getting in some me time everyday is great for your mind, body and soul!

Ask for help

Don't be afraid to ask for help or to hire help. Having a reliable babysitter or two could give you the break or relief you need. There is nothing wrong with getting some help with cleaning around the house or maybe you need some quiet time to get some studying done.

Family time

My children love to spend time with me, and it's important to me that we spend quality family time together every day. Finding that time every day can be challenging though, especially when some days are more complex than others. Gathering everyone in the kitchen is a great way to spend time together, especially if your children's favorite foods are on the menu!

Some week nights call for hours worth of homework and I need to have quick and full of flavor meals readily available. Luckily, I have a freezer full of new Frontera® frozen meals that I just picked up at my local Kroger!

Frontera has a variety of frozen bowls available, including the Chicken Fajita Bowl, Tinga Taco Bowl, Barbacoa Taco Bowl and the Veggie Taco Bowl. I decided to purchase the Frontera® Veggie Taco Bowl and Frontera® Chicken Fajita Bowl - they both looked amazing!

The Chicken Fajita Bowl is made with fire-roasted poblanos and chipotle chiles, it's perfectly seared and a classic Mexican dish that tastes great over rice. The Veggie Taco Bowl contains fire-roasted tomatillos, peppers, corn, and more that all come together in a zesy green chile and cilantro sauce.

Frontera was established in 1996 with an award-winning Chef that utilizes time-honored cooking methods, preparing foods with expertise and passion. Frontera bowls are full of flavor, and easy to prepare, after experiencing all of these delicious flavors, I know Frontera frozen bowls are a must have freezer meal from now on!
